Everyone’s favourite childhood treat! Chocolate crackles are super easy to make and can be enjoyed by anybody at any age.
INGREDIENTS (Serves 24)
4 cups Rice Bubbles
1 cup icing sugar
1 cup desiccated coconut
250g copha, chopped (vegetable fat shortening)
3 Tbsp cocoa
1. In a large bowl, mix the Rice Bubbles, icing sugar, cocoa & coconut.
2. Slowly melt the copha in a saucepan over a low heat. Allow to cool slightly. Add to Rice Bubbles mixture, stirring until well combined.
3. Spoon mixture into paper patty cases and refrigerate until firm.
Sneak some vegetables into their diets with this easy to make sausage roll recipe!
INGREDIENTS (Makes 36)
400g sausage mince
1 large carrot, grated
1 medium zucchini, grated
1 clove garlic, crushed or finely chopped
1 egg, beaten
1 small onion, chopped finely
2 Tsp curry powder
3 sheets ready rolled puff pastry
1. Preheat the oven to 180c and line a baking tray with greaseproof paper.
2. Heat a splash of oil in a frying pan, add the zucchini, carrot, garlic and onion. Cook on a low heat until the vegetables have softened for about 5 minutes. Don’t let them brown, you just want them soft. Once the vegetables are cooked, add them into a large bowl along with the meat & curry powder and mix well.
3. While the mixture is cooling take your sheets of puffed pastry and cut in half or thirds length ways, depending on how large you would like your sausage rolls to be. Divide the mixture and spread each piece down the middle of the pastry sheets, leaving a gap of about 2cm each side.
4. Roll the pastry over the sausage meat mixture so that the two ends meet. Press down with a fork to seal it
5. Cut the sausage rolls into whatever size you like. Place them onto the baking sheet and brush with a little beaten egg. Sprinkle some poppy seeds on top if you wish.
6. Cook for 25-35 minutes (time will depend on the size of the rolls) until browned and cooked through.
Add a touch of zingy sweetness to this non-traditional scone recipe!
INGREDIENTS (Makes 12)
1 cup lemonade (fizzy)
1 cup cream
3 cups self-raising flour
Handful of sultanas (optional)
1. Preheat oven to a very hot 220c.
2. Mix flour, a few sultanas if using, cream and lemonade. Mixture will be soft.
3. Turn onto a lightly floured board. Pat down, do not roll. Use a round cookie cutter to cut scones. Place them on a lined baking tray approximately 1cm apart.
4. Brush tops with milk or a lightly beaten egg. Bake for about 10 minutes, or until tops are golden. Serve warm from the oven with jam and fresh cream!
